I am thrilled to bring you this recipe! This recipe was inspired by mango salsa, peach salsa, and all of those other fruit-based salsas I never thought I would enjoy again. I love the combination of sweet mango with spicy jalapeño with herbaceous notes of cilantro. The only problem is, that mango is a bit high in carbs.
Sure, a tablespoon of mango salsa may not completely break the carb bank. Sometimes, however, it’s nice to not have to weigh and measure and worry quite so much about going over the limit. With this recipe, you can pile on the salsa instead of eating just a taste.
Starfruit makes it all possible. What an under-utilized low-carb fruit! One cup of this fruit has seven grams carbs and three grams fiber for an awesome 4 net carbs per cup! Perfect for a low-carb diet!
Starfruit has a mildly sweet flavor that works well to balance out the heat of the peppers. I like to use starfruit that are super ripe for the best, almost mango-like, flavor. Starfruit are nice and ripe when they are a golden yellow with a bit of brown starting on the points of the edges.
The only thing I don’t like about starfruit is that it can be tough to find. One of the grocery stores near me, (Harris Teeter for my southern audience), has a small section devoted to unusual produce. Here, they have ugly fruit, chunks of aloe, whole coconuts, and even my beloved starfruit.
This recipe for Low-Carb Grilled Salmon with Starfruit Salsa makes a super easy and quick meal. The most time consuming thing is chopping up all of the ingredients for the salsa. If you are eating a keto diet, you may want to serve it with something higher in fat to balance out the macros-perhaps end the meal with a bit of low-carb vanilla ice cream, for example. Enjoy!

Ingredients
- 1 pound wild salmon cut into 4 pieces
- 1 1/2 teaspoons lime juice
- 1/16 teaspoon sea salt
- 1/4 teaspoon granulated stevia/erythritol blend (Pyure) Honey may be substituted for Paleo
- 1 large starfruit large seeds removed, diced
- 1 small jalapeno pepper seeded and minced
- 2 tablespoons red onion finely diced
- 2 tablespoons fresh cilantro minced
- 1 teaspoon olive oil
- sea salt
- black pepper
Instructions
Preheat grill to high. Place wild salmon between paper towels to dry. Allow to dry while continuing with the rest of the recipe.
In a small mixing bowl, whisk together the lime juice, salt, and the granulated stevia/erythritol blend.
Add the star fruit, jalapeño, red onion, and cilantro. Gently mix together. Taste and adjust seasoning if necessary. Cover and refrigerate until time to serve.
Rub salmon with olive oil, then season generously with salt and pepper. Place on preheated grill. Turn grill to low and close the lid. After salmon is partially cooked through (about 3-4 minutes), turn and continue cooking with grill closed on the other side until desired doneness is reached, about 3-4 minutes.
Serve salmon with salsa spooned on top.

I love starfruit, it’s so pretty! I never would have thought to eat it with salmon but it sounds delicious!

I am so fascinated with Star Fruit. I have to find these in my local store. We used to get them where I grew up but didn’t taste them anytime. Now I wonder why I didn’t. The salmon and start fruit salsa are a winning combination.
